Spanish-Style Chicken Skillet

4 boneless skinless chicken breasts, cut in half2 Tbsp. olive oil1/4 cup flour2 tsp. paprika1 tsp. thyme1 tsp. dried garlic1/2 tsp. salt1/4 tsp. black pepper1 tsp. cayenne pepper1 large onion, cut into wedges1 large bell pepper, cut into thin strips1 14.5 oz can diced tomatoes (undrained)1/2 cup chicken broth
Heat olive oil in a large non-stick skillet on medium heat. In a small bowl, mix flour, salt, and all spices except the cayenne pepper. Sprinkle chicken with 2 Tbsp. worth of the mixture. Add the chicken to skillet and cook 3 minutes on each side (or until browned). Remove from skillet. Add onion and bell pepper. Cook 5 minutes or until tender. Stir in chicken broth, tomatoes, and rest of flour mixture. Bring to a boil and add chicken. Reduce heat and cook 10 minutes or until chicken is cooked through.
Makes 8 servings of 1/2 a chicken breast and 1/2 cup sauce.
