Pumpkin Choc. Chip Muffins

Ingredients
PUMPKIN CHOCOLATE CHIP MUFFINS1 c. barley flour1 c. Ideal no cal. sweetener1 tsp. baking powder1/4 tsp. baking soda1/4 tsp. salt1/4 tsp. ground cinnamon2 tbsp. ground flax 6 tbsp. water1 c. ground pumpkin (canned)1/2 c. cooking oil1/3 c. chocolate chipsMix together. Fill muffin cups and bake at 350 for 20-25 minutes.
Directions
Makes 12 reg muffins or 24 mini muffins

In a small bowl, mix together 2 tbsp. ground flax and 6 tbsp. water. Let sit for two minutes while you mix the other ingredients. Add flax mixture to dry ingredients and Mix all ingredients together and bake at 350 for 20 - 25 min. 12 - 15 min. for mini muffins


***the flax and water mixture is an excellent egg substitute in any recipe!
