80 calorie Apple Cinnamon Muffins

Ingredients
3/4 cup Apple Sauce1-3/4 cup Splenda 1 egg1 cup milk 3 tbsp vinegar1 tsp. salt 2 medium apples2 cups whole wheat flour 1.6 tsp (8 ml) baking soda1.2 (6 ml) cinnamon
Directions
1. Blend applesauce, splenda, and beaten egg until smooth.

2. Add milk, vinegar, diced and peeled apple. Mix well

3. Mix dry ingredients in a separate bowl.

4. Pour wet ingredients into the flour mixture and stir ONLY TILL MOISTENED.

5.Spoon into greased/lined muffins cups and sprinkle with some excess splenda.

6. Bake for 20 minutes or until toothpick inserted into the center comes out clean.

Makes between 18-21 muffins (muffins are quite small)
