Baked Salmon

Ingredients
2 cloves garlic, minced Olive Oil Flavored Cooking Spray, to taste 1 teaspoon dried basil 1 teaspoon salt 1 teaspoon ground black pepper 1 tablespoon lemon juice 1 tablespoon fresh parsley, chopped 2 (6 ounce) fillets salmon
Directions
In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees F (190 degrees C).
Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

    This recipe does not say, but it must have been made with atlantic salmon. Pink salmon has about 8 grams of fat for 6 ounces. - 12/4/10

    I modified the recipe and realized that it was pretty fattening. Sorry it took mw such a long time to check back. Using EVOO flavored spray really makes a difference calorie wise

    This was very good! I love baked salmon, and although I was missing some of the ingredients, It turned out very well. I substituted fresh squeezed lime juice for the lemon juice and ate it on a bed of baby greens. I bet it would be great on whole grain pasta! - 6/21/08

    It is good if you like the basil flavor. I did not enjoy the basil, so i omitted it. Other than that salmon is excellent with lemon for the tartness, its very tasty. - 4/25/08
