Fried Catfish

Ingredients
8oz Catfish.25cup corn meal.25cup all- purpose flour1 tbs cayenne pepper
Directions
Using a cast iron frying pan, heat 1cup of canolia oil until it reaches 375 degrees.
Mix the corn meal, flour and 2.5 tsp. of cayenne pepper. coat the fish with the rest of the cayenne pepper and then coat it with the flour mixture. This makes it very flavorful, with out adding extra salt.
When the oil is at temp., place the fish, carefully into the pan, fillet side down first. Let the fish crisp and turn brown and then flip, and do the same. When the fish is cooked, place it on a cooling rack with cookie sheet underneath and let fish drip. Keep warm in oven until ready to eat. This serves 2/4oz fillets. For topping and some heat, I use lousinna hot sauce. Yummy!!!
