Lisa's Coconut Milk Red Lentils

Ingredients
3/4 c. red lentils1 cup of diced frozen peppers and onions3 minced garlic cloves1/2 can of whole or sliced water chestnuts1/2 a 10z box of frozen spinahc1.5 cup of Organic Vegetable Stock1 c of canned diced tomatoes1c of light coconut milk.5 TBS of EVOO1/4 c of 0% Greek YogurtSpices (coriander, cumin, garlic powder, garam masala, and a pinch of cayenne pepper or crushed red pepper flake)Garnish with cilantro
Directions
Saute onions, peppers, and garlic in EVOO, Add spices except cilantro and cook 1 extra minute. Then add the remaining ingredients (except, cilantro and yogurt) and cook for 30-40 minutes uncovered under a low flame. Garnish with cilantro and serve yogurt on the side (or you could stir it in at the end!)
