Gingerbread Protein Pancakes

Ingredients
1/4 cup egg substitute (same as 1 egg)1/2 cup dry pancake mix(I used Kerbey Lane Gingerbread Pancake mix)1 Tbsp vegetable oil1.5 scoop vanilla protein powder1/4 cup quick-cooking oats1/2 cup water
Directions
**Adjust water to desired batter thickness (using 1/3 cup water will result in thicker batter).

Preheat and lightly oil pan.

Mix ingredients. Use a soup ladle to spoon one pancake.
Cook on medium heat for 1-2 minutes each side, or until bubbles in the center stop popping and edges can be lifted.

Makes 4 large, thin pancakes.
