Chicken caccitori

Ingredients
Red peppers diced (I often use roasted red peppers for added flavor)2 skinless chicken breasts with all fat cut off and cubed2 large onions chopped in large chunks3 cans of diced tomatoes (you can also use home canned in water if you have it...gives a fresh flavor)Basil, Oregano, Garlic powder 2 Tablespoons each (or to taste)Sugar 3 teaspoons (or to taste) Olive oil 4 tablespoons to cook chicken, peppers, onions in.
Directions
Cut all fat off chicken and cube. Brown chicken with garlic powder in olive oil. When brown add diced onions and red peppers. Cook until just tender. Add tomatos, herbs and sugar. Mix well. Bring to simmer, cover and simmer for 30 min. Turn off heat and let stand for 15 min for flavors to meld.
May be served over noodles or rice if wanted. I eat without for a lower calorie dinner.
