Chickpea & Quinoa salad

Ingredients
2 Servings1 can mixed beans or chickpeas, drained and rinsed1/2 cucumber chopped1 tomato chopped1 cup cooked quinoa (or pasta)2 tbsp chopped parsley1 tbsp red wine vinegar2 tsp olive oil1/4 tsp Dijon mustard.Pinch of salt, black pepper, thyme, oregano.
Directions
1. Place chickpeas (or beans) in large bowl, and add cucumber, tomato, quinoa (or other pasta) and parsley.
2. In small bowl, whisk together vinegar, oil, mustard, and any other spices you wish. Pour over salad and toss to coat.
