Terrific Turkey Meatloaf

16 oz ground turkey, 93% lean1 cup red peppers, chopped1/2 medium-sized onion1/4 cup Parmesan Cheese, grated2 tsp worcestershire sauce1 tsp paprika1 tsp pepper, red or cayenne1 tbsp garlic powder1 tbsp onion powderDash of salt1 tbsp low carb, reduced sugar tomato ketchup (optional)1 large egg1 tsp black pepper
You will need a large bowl to mix your ingredients in and a small loaf pan to cook it in. I use the disposable aluminum pans for easy portion control and a quick clean up afterwards.
Strat by placing the ground turkey, onions and peppers in the bowl.
I add my spices which include paprika, cayenne pepper, garlic powder, onion powder, a dash of salt and ground black pepper.
Add the worcestershire sauce and one egg and work the spices through the meat mixture with your hands or a large spoon or fork. Add your grated parmesan cheese. This adds flavor and removes the excess moisture from your meat. The amount of parmesan you add depends on how moist or dry your meat mixture looks and feels. You should be able to form a patty or loaf without the mixture coming apart. If the the mixture is still too wet add more grated parmesan.
Then add the meat to the loaf pan and pat down into a loaf. Place your loaf pan on a baking sheet and place in a 350 degree oven for approximately 35-45 minutes.
You will able to tell the meatloaf is done by the color and you will see the clear juices bubbling around the edges of the meatloaf.
During the last 5 minutes of cooking you can glaze the top of your meatloaf with the ketchup if desired.

I haven't tried this particular recipe, but I use a similar one (originally from Shape Magazine a couple of years ago). If you're looking to add more veggies to your (or your kids') diet, try adding some grated carrot. Once you cook the meatloaf, you don't even notice it's in there. - 6/11/08

I make this recipe without the peppers and red pepper. Still used some bread crumbs with the parmesan as a personal preference. This was my first ever meatloaf to make, and my husband and I were pleasantly surprised at how delicious and juicy it was! I've already made it 2 or 3 times since:] - 7/30/07

UGH. Noone in my family could eat this. I only used 1/2 the onion, and 1/2 the onion powder and there was still WAY too much onion flavor. Didn't add the red peppers, and even the little cayenne that I added made it WAY too HOT. Way too many spices. You couldn't even taste the turkey. - 4/7/07

this is delicious! i didnt have any garlic or onion powder so i just minced some garlic cloves and it was delicious! i was a little skeptical it would hold together but the parmesan worked really well. my husband took the leftovers to work and i already have recipe requestsfrom his co-workers! - 11/15/07
