P90X Mushroom Omelet, L1

Ingredients
6 egg whites or 1 cup liquid egg whitessalt and pepper to taste3/4 cup mushrooms, sliced2 T green onion, chopped1/2 Roma tomato, chopped1 1/2 ounces low-fat cheddar cheese, shredded
Directions
In a small bowl, lightly beat the egg whites with a fork and season to taste with salt and pepper.

Coat small nonstick saute pan with cooking spray and place over medium heat, add the vegetables and cook til tender. Add egg mixture and cook til set on the bottom. sprinkle the cheese over top, fold omelet in half and cook a bit longer until cheese is melted and eggs are set.

    i love mushroom omellets but because I find some of these protein dished to be too big for me since I do not do the extreme exercises, I split with another family member - 1/25/11
