Sausage and Veggie Frittata

Ingredients
1 T. Olive Oil10 extra large egg whites2 whole eggs1/2 cup diced onions1/2 cup diced red peppers1 (10 oz.) package of frozen spinach, thawed and drained1/3 pound your favorite fresh pork sausage1/4 cup shredded cheddar cheese8 oz. sliced mushrooms
Directions
Preheat oven to 400 degrees.

In a large round non-stick skillet cook and crumble sausage. Remove sausage from pan and drain on paper towels. Wipe the oil out of the pan. Next, cook onions, peppers, and mushrooms on medium high heat until tender. Break up spinach and add to pan along with sausage that has already been cooked. Turn off the heat. Beat eggs and egg whites until light and frothy. Pour into pan and top with the cheese. Bake in 400 degree oven for 20 minutes.

Cut frittata into 6 equal serving pieces and enjoy.
