Tex-Mex Tilapia

Ingredients
1 can of black beans, rinsed1 can yellow corn, drained2 cups of favorite salsa1 bunch of spinach, roughly chopped4 - 4oz Tilapia filetsMrs. Dash Chipotle Seasoning2 cups cooked white rice
Directions
In a large pot, mix the corn, black beans, and salsa. Cover that mixture with the chopped spinach. Season the tilapia filets with Mrs. Dash Chipotle Seasoning and lay each filet on top of the spinach. Cover with a lid and let simmer on medium heat for about 20 minutes. The spinach will cook down and the Tilapia will steam. Remove the Tilapia and stir the corn & bean sauce. Spoon the corn & bean sauce over white rice & top with a Tilapia filet. It is deliciously quick & easy!
