Quinoa with Sauted Vegetables

*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 2 cup (remove)Spinach, fresh, 3 cup (remove)Onions, raw, .25 cup, chopped (remove)Green Peppers (bell peppers), 0.5 cup, chopped (remove)Mushrooms, fresh, 1 cup, pieces or slices (remove)Carrots, raw, .5 cup, chopped (remove)Garlic, 1 clove (remove)*(Great Value) 100% Extra Virgin Olive Oil Cooking Spray, 1 serving (remove)
Cook Quinoa per package directions. Meanwhile spray saute pan with cooking spray. Add onoins, peppers and carrots for 2-3 minutes or until desired tenderness. Add mushroom, cook another 1 min. Add spinach, stir in to vegetable mix turn, off heat, cover to steam/wilt. Add quinoa to saute pan and mix with vegetables. Top with parmesean if desired.
