Curried Lentil and Brown Rice Salad (or Side Dish)

Ingredients
1 cup dry Lentils2 medium onions, diced2 large carrots, sliced1 cups fat free Chicken or Vegatable Broth2 cups water1/2 T Curry Powder1/2 T CuminSalt and Pepper to taste3 cups zucchini, sliced2 cups cooked and cooled brown rice1 cup Salsa or 2-3 Roma Tomatos, seeded and diced1/2 cup Cilantro, chopped
Directions
Add lentils, onion, carrots, 1 cup broth and 2 cups water to large pot. Bring to boil, reduce heat and simmer for 25-30 minutes, until tender but not mushy. Remove from heat, pour off extra liquid and add Zucchini and Curry Powder and Cumin.

Combine lentil mixture and brown rice in one bowl. Add salsa or tomatos and cilantro. Mix well. Add salt and Pepper to taste. Spread mixture on large baking sheet to cool. This will keep the dish from clumping. Serve cold.
