Spinach Pancakes

Ingredients
1 10-ounce package frozen spinach1 small onion, chopped8 eggs, slightly beaten (or egg substitute equal to 8 eggs)2 T. extra virgin olive oilLow fat feta cheeseLow fat or fat free sour cream (optional)Salsa (optional)
Directions
Makes about 4 servings or 4 4-inch pancakes.

Mix first three ingredients in large bowl.
Heat 2 T. olive oil in non-stick skillet over medium heat.
Pour 1/4 egg mixture per pancake.
Sprinkle 1 T. feta cheese on top of each pancake. Cook 2 minutes on each side or until done.
Top with sour cream and salsa if desired.
