Pumpkin Butterscotch Muffins

1 box of Yellow cake mix1 15oz can of pumpkin (no salt added)1/4 cup of no sugar added applesauce1/4 cup of almond milk (or any kind of milk will do)1tsp vanilla extract1tsp almond extract2tsp pumpkin pie spice1/4 cup of butterscotch chips1/4 cup of sugar mixed with 1TB cinnamon
Makes 18 regular sized muffins
Preheat oven to 350 degrees.
Line cupcake pans with liners and spray lightly with cooking spray.
With mixer or hand mixer, cake mix, cake of pumpkin, applesauce, milk, extracts and pumpkin pie spice. Mix for 2 minutes or until it comes together scraping down side of bowl as needed. Stir in butterscotch chips by hand. Spoon mix into liners filling about 2/3 of the way full. Sprinkle about 1/2 tsp of cinnamon sugar mixture on top of muffin (optional and can add as little or much as want for a crunchy top).
Bake for 20 minutes. Enjoy!
