Rise and Shine Crockpot Fruit N' Oatmeal

Ingredients
1 cup oatmeal 2 1/4 cup water1/3 cup raisins1 apple, peeled, cored and diced1 tsp cinnamon (or to taste)Makes 4 servings
Directions
Makes 4 servings

Lightly spray crockpot with cooking spray to prevent sticking. Stir ingredients together in small bowl, and pour into crockpot.

Cook on low for 8-10 hours. Guaranteed to make a delightful warm cinnamon and fruit smell to wake up to the next morning!

Optional ingredients:

Nuts or different fruits (like blueberries, peaches, or strawberries)

Or, to add more fiber and a nice nutty flavor, you can add spelt berries or other whole grain. You will need to cook the spelt ahead of time and add to the crockpot mix, because the berries won't soften on the low setting. Just be sure to adjust the calorie level to account for the spelt or other whole grain.

    I havae made this and used 1/2 oatmeal and 1/2 brown rice. Makes a great fiber dish. I added the apple - nuts -dates - rasins - It is DELICIOUS.
    I did not peal the apple as this adds fiber to the dish. It is still good ... like a bake apple. - 10/3/07

    Super simple! I was able to have a nice warm breakfast on a work morning because it was made the night before. All I had to do was put some in a bowl. And this recipe will be so incredibly versatile. Play with the seasonings and spices that you put in it as well as the fruit! Great breakfast! - 10/14/07

    Pretty good, but my crock pot stinks, Even set on warm, it was cooked and done by 4am...I had forgotten to put in the oats and woke up at 12am to do it...If I get a new crock pot, I will definitely give it another try...I do like waking up to breakfast made!! - 1/12/11

    I made this with steel cut oats and the water dried out too fast, so I added at least another 6 cups of water for it to turn out. Now I know for next time. The flavor is good, but felt that the fruit was over done. Perhaps add the fruit a bit later would be good. - 10/9/07

    This is a wonderful recipe to wake up to and so good for you. People don't understand how much better oatmeal is for you than processed cereals. I will definitely make this again. I have also seen the alternative to add raisins and dates which soften as they cook. Fantastic! - 10/2/07
