Simple Vegan Mac and Cheese

Ingredients
1 pound pasta (regular or gluten-free)1 1/4 cups water1 cup plain, fat-free soymilk (may use other non-dairy milk)3/4 cup nutritional yeast3 tablespoons cornstarch or potato starch1 tablespoon lemon juice1 teaspoon salt (or more to taste)1/2 teaspoon garlic powder1 teaspoon onion powder1 tablespoon mustard1 teaspoon smoked paprika2 tablespoons tahiniDash of Cayenne Pepperblack pepper to taste
Directions
Put the pasta on to boil, according to package directions. Drain and return to pot. Mix in remaining ingredients and heat.

If the sauce is not as flavorful as you’d like, add a little more of your favorite spices.

    I liked it a lot. If you don't care for nutritional yeast, though, you won't like it so much. Also, we found that if the sauce dries out, adding water really helps it return to a smoother, creamier consistency. Don't be sheepish with the water! - 2/28/12
