Ingredients
6 large eggs1 cup heavy cream1/4 tsp black pepper1/2 tsp salt6 slices pre-cooked bacon, chopped3/4 cup sliced onions, sauteed in advance with butter4 oz Monterrey Jack shredded cheese2 oz Mozzarella shredded cheese
Directions
Mix eggs, cream, salt and pepper. Pour into greased pie plate. Top with bacon, sauteed onions, then monterrey jack cheese and finally mozzarella cheese. Bake at 350 for 35-45 minutes, until brown, fluffy and toothpick comes out clean.

    this was very good. I substituted the cream with 3/4 cup 1% milk and used only 4 oz of cheese total and omitted the butter in cooking the onions in an effort to make it more weight watchers friendly but it was still very good and simple to make - 9/30/10
