Pork & Veggie Stew

Ingredients

2lbs pork tenderloin1/4 C WW Flour1/4 C Canola Oil1 C onion, celery, carrot, zucchini, frozen corn, snow peas, green beans2 C Sweet Potatoe (1/4 inch cubes)3 cans beef broth1 280z can of diced tomatoes1 t dried thyme, rosemary, sage1/2 t salt, pepper
Cut pork into 1/4" cubes. In a large, resealable plastic bag, combine pork & flour.
Seal bag and coat pork.
Heat oil in pan and cook pork until browned.
Add all ingredients to crock pot and cook until vegetables are tender.
NOTE: IF YOU SERVE IN MUGS INSTEAD OF BOWLS, YOU CONTROL YOUR PORTION SIZE, AND IT IS EASY TO PASS A TRAY OF MUGS AROUND TO PEOPLE AT A PARTY!!
