Speedy Asian Chicken

1/2 TBSP Corn Oil1/2 TBSP Sesame Oil2 Boneless skinless chicken breasts, cubed2 TBSP Corn starch3 Garlic Cloves, Minced1/4 Cup Light Soy Sauce1 TBSP Rice Wine Vinegar1 Red Bell Pepper, Julienned2 Carrots, Julienned1 Zuchinni, Julienned1/4 Cup Chicken Broth1 TBSP Light brown sugar, packed1 Bunch Scallions, cut into 1 inch pieces
1. Combine the oils and heat to high in a nonstick pan.
2. Coat the chicken in the cornstarch.
3. Add chicken and garlic to pan and cook until chicken is nearly cooked.
4. Add remaining ingredients except scallions.
5. Cover, cook three minutes
6. Add the scallions
7. Cover, cook two more minutes
Spice it up with a little chili oil or hot sauce!
I like to serve this with brown rice, or sometimes fried rice!
