1/2 package of frozen (cooked) spinach2 slices of scanadian bacon diced1/2 cup of chopped portobella mushrooms- cooked12 whole eggs1 cup of shredded cheddar cheese ( light or reduced fat)
cook spinach in microwave and sautee chopped mushrooms in a pan with some cooking spray/ Spray the sides and bottom of a 12 muffin, muffin tin. Beat all the eggs. Put a small amount of spinach, bacon, and mushrooms in each cup. Top with egg mixture and then sprinkle with cheese. Bake on 350 for 20minutes.
