Oat and Apricot Breakfast Bars

1 cup whole wheat flour1 teaspoon baking powder½ cup unpacked brown sugar, packed½ cup uncooked quick oats15 pieces dried apricot halves, diced2 tablespoons sunflower seeds1 tablespoon butter, melted2 eggs
1. Preheat oven to 350ºF.
2. Coat an 8-inch square baking pan with cooking spray.
3. Whisk together flour, baking powder, sugar, oats, apricots and sunflower seeds.
4. Whisk together butter and egg substitute.
5. Quickly mix together wet and dry ingredients.
6. Spoon into prepared pan and smooth top.
7. Bake until firm, about 20 minutes.
8. Cool completely before cutting into 8 rectangles.
