Oatmeal Almond Apple Muffin

1 C flour1/2 C old-fashioned oatmeal1/4 C + 2 Tbs Brown sugar2 teas Baking powder1/2 teas cinnamon1/4 teas nutmeg1 teas vanilla4 egg whites (or 2 whole eggs)1/2 C milk3/4 C unsweetened applesauce1/2 C almonds
In a bowl mix together the dry ingredients. In a second bowl mix together the wet ingredients. Combine and stir just until mixed, be careful not to overmix. Line a muffin tin with cupcake wrappers or spray with non-stick spray and divide the batter among the cups. Top each muffin with some of the slivered almonds.
Bake at 400 degrees for 15 minutes or until a toothpick poked in the center comes out clean. Remove from pan and allow to cool.
