Vegetable Fritata with Egg Whites

1 cup asparagus bite size1 cup broccoli bite size1 cup spinach leaves2 Tbsp olive oil12 egg whites8 Tbsp grated Parmasan cheese
Sautee the vegetables until crisp/tender in the olive oil. Add the egg whites and cook until set. Place under broiler until golden brown - top with cheese or add cheese before broiling. Serves four.
