Cold Zucchini Soup

Ingredients
* 8 tomatoes, quartered * 2 medium zucchini, chopped * 3 celery ribs, chopped * 1 green pepper, quartered * 1 large onion, quartered * 2 tablespoons lemon juice * 1/2 teaspoon dried basil * 1/2 teaspoon ground cumin * 1/2 teaspoon grated fresh lemon rind
Directions
Throw everything in the blender and puree till smooth...a couple minutes. Serve with homemade whole wheat garlic toast.
