Creamy Mussels

Ingredients
mussel - 16 ozolive oil - 1 tbspwhite wine - 8 fl ozlight cream 1 tbspshallots - 1 tbsp
Directions
Heat oil in large pot over medium heat. Add Shallots; cook until translucent.

Add saffron (pinch) and wine; bring to boil
Add mussels and cook unti mussels open.

Remove mussels and transfer to bowl to keep warm.

Strain cooking liquid, discard solids, return liquid to pot and boil

Add cream and reduce to simmer. Cook until thickened.

Add to mussels and serve.,

    Sounds very similar to the one my Deli man advised me to do. He suggested that I heat oil and butter, add onion and garlic, then add wine, then mussels. Remove from heat and add cream. Serve with bread - yummy to yours and his! - 8/7/08
