Thai Cucumber Salad

Ingredients
2 large cucumbers thinly sliced with or without peel1 cup thinly sliced red onions1 cup of chopped pineapple1/2 red pepper finely chopped1 cup distilled vinegar1 cup water1/2 cup of splenda (If you use sugar then double it and add the calories)3 tbsp cilantro
Directions
In a sauce pan heat water, vinegar and splenda. Bring to a boil and then simmer it for for 2 minutes.

In large bowl mix sliced cucumbers, red pepper, red onion, pineapple and cilantro. Dump hot mixture on top of all veggies and marinate in fridge for atleast 15 minutes. The longer the better. To serve, spoon out with a slotted spoon.
