Tuna Spinach Mornay Pie with Mash

Ingredients
30g unsalted butter1 medium brown onion, sliced thinly1/4 cup plain flour2 cups milk, warmed150g baby spinach425g of tuna in spring water, drained2 tablespoons of lemon juiceMash400g potatoes, chopped(recipe calls for 300g celeriac but I didn't have any so I've used whatever was in the fridge)3/4 cup chopped celery1/2 chopped green beans2 tbs milk1/4 grated parmesan cheese
Directions
1. Make the mash and preheat grill.
Boil, steam or microwave the veges until tender, drain. Mash the potato and add other vege in a large bowl with milk until smooth. Stir in cheese, cover to keep warm.

2. Melt butter in saucepan, cook onion, stirring for about 5min or until soft. Add flour and stir until mixture thickens and bubbles. Gradually add milk, stir until mixture boils and thickens. Remove from heat, stir in spinach tuna and juice.

3. Spoon tuna mixture in shallow 1.5L flameproof dish, top with mash. Place under grill until browned slightly.
