South Beach Chicken Mole

Ingredients
2 1/2 lbs of chicken breast tenderloins1 large onion chopped1 large bell pepper chopped2 cloves of garlic, minced2 T chili powder1/2 t ground cinnamon1/2 t ground cloves1 can (14 1/2 oz) diced tomatoes2 T peanut butter2 T unsweetened cocoa powder2 scallions, chopped
Directions
Sprinkle chicken with salt and pepper. Heat skillet with olive oil cooking spray over medium- high heat. Add chicken and cook for 8 minutes, turning once, or until browned on both sides. Remove chicken to a large plate.

Add onion, bell pepper, and garlic to skillet and cook for 3 minutes or until onion is translucent. Stir in the chili powder, cinnamon, and cloves and cook for 1 minute. Return chicken to the skillet. Add the tomatoes (with juice), peanut butter, and cocoa powder and bring to a boil. Cover and simmer, stirring every few minutes, for 25 minutes. Turn the chicken once or until the chicken is no longer pink. Garnish with scallions.

    One of my favorite recipes from being on South Beach and really worth trying. One word of caution, Jif has brown sugar in it, so use something like Smucker's Natural PB, rather than this. - 3/6/13

    So it is 2-half pounds or 1 pound…not 2.5 pounds of chicken. No way to make the calories work at 2.5 pounds. Very easy to make and delicious. - 8/2/13
