One-Minute Microwave Muffin

Ingredients
1 large egg2 oz deli meat (I like ham or turkey)1 oz cheese (I use slices, but you could also use shredded)1 English muffin (recipe calories are for Thomas' Better Start High Fiber muffins)non-stick spray, pinch salt, pepper or other seasoning you likeZiplock one-cup snack size container (or a glass bowl, or ceramic dish - basically I use this cause it makes the egg a perfect round shape to fit the muffin - so in this case - size matters!)
Directions
Spray the Ziplock cup with cooking spray. Crack egg into the container and add your salt, pepper or other seasoning and beat with a fork until scrambled. Pop in the microwave for 20 seconds.

Meanwhile, split English muffin and pop in toaster.

Take out egg (it will still be runny) and top with cheese and meat. Pop back in microwave for another 30 seconds.

Grab a paper towel or napkin and take the hot, toasted muffin out of the toaster. When the egg beeps, grab it out of the microwave and dump the contents on top of the muffin. Sandwich and GO!

    Use a coffee mug for cooking the egg and it will be the perfect size for the muffin and no plastic used. - 4/16/12

    I try to make a muffin pan of these at the beginning of the week and with a family of 5 they don't last long! Just spray the muffin pan; add beaten eggs, veggies, salsa, meat, etc and bake. Then store in a baggie or airtight container and warm as many as you need, when you need them! Yummy! - 6/12/12

    I'm pretty sure that SP wouldn't have featured this recipe if microwaving in a plastic dish was so deadly. Don't breathe in the air outside either, it also causes cancer.     I do this all the time with egg beaters or egg whites in a carton, but I use 2 eggs worth and no meat. no scrambling required. thanks for the tip to spray the container- cleanup has always been the hardest part. without the meat, my version is only 198 calories and 3g of fat. - 2/12/12

    I use a toasted sandwich thin, an egg, and a Morningstar sausage patty. Cheese if I feel like it. This is my weekend breakfast if I'm in a hurry. Love it.

    I do this at least once a week. I change it up by using a toasted sandwich thin some days, and I also precook some turkey bacon to add instead of the deli meat. Much costs less than the fast food version, and it is SO good! - 11/24/11

    My husband and I make these at least twice a week; however we use a glass storage container for two reasons - 1. It doesn't need any cooking spray or butter and is still fairly easy to clean and 2. Isn't there a whole controversy over heating food in plastic, (BPA) we just try to avoid it. - 12/9/11

    I bought a microwave egg mcmuffin maker at Walmart for less than $4.00 it's reusable and in section with appliances perfect size for on muffins. I don't scramble my egg to make it more like the fast food version. I use Kraft lowfat cheddar cheese. large egg and skip the bacon. easy. cheap. less cal! - 12/7/12

    I’ve made this breakfast sandwich for years just like this. You don’t need to use the plastic just spray a microwavable dish the size of the muffin. You can also make it come out as poached egg. Hint: cover the dish and when you hear the second pop of the egg (45sec+/-) it’s done perfectly. Boom! - 3/14/12

    Micro Egg doesn't appeal to me. I stove top cook an egg in the a.m. or night before and place in a container with a slice of cheese and slice of canadian bacon. Once at work i toast my english muffin and a few seconds in the micro to warm the egg, bacon and cheese.. my cal count is > 279 though. - 1/21/12

    This is my breakfast everyday. I have the calories down to 230. Look for a leaner Canadian bacon. The brand I buy has 60 calories for 3 slices and I only use 1/4 c egg beaters. My cheese is 60 calories a slice. I wish I knew what cheese was 45 calories a slice and I would try it. - 8/28/12

    I eat this every couple of days but my version uses Sara Lee 45 calorie bread, extra lean ham, and 2% milk slice cheese. This drops the calories by 50. I know 50 calories doesn't seem like much but it can be used for a piece of fruit or if not replaced with anything it adds up over time. - 2/12/12

    Great recipe! This is so easy that my kids can make their own before leaving for school in the morning. It tastes really good and they can eat in the car on the way to school. Faster even than a bowl of cereal! Nice to know you can have a healthy, fast breakfast that also tastes good. - 1/29/12

    I have this every day but sometimes i have it for lunch instead of breakfest and I use a 1/4 cup of egg beaters to cut down on the salt and chloresterol. I have a container that will make 2 of them at a time and it is for microwaves. - 1/14/12

    NEVER USE A PAPER TOWEL OR NAPKIN TO REMOVE ANYTHING FROM A HOT TOASTER. EITHER ONE MIGHT CATCH ON FIRE QUICKLY. Use WOODEN TONGS INSTEAD.I no longer do the ham added I tablespoon Salsa on muffin less Sodium - 12/9/11

    Hey Nora - Thanks for specifying this. I never use the paper towel to actually remove the toast, just to wrap the sandwich in to take it to go!

    With slight variations I have made such a breakfast sandwich for years.

    Instead of a whole egg, I use one or two whites (depending on the egg size) & I skip the ham. Be sure to spary the cup with a butter spray - eggs stick!

    Such a sandwich carries this gal through until noontime!
