Corn Chowder

Ingredients
1 tablespoon olive oil2 tablespoons finely diced celery2 tablespoons finely diced onion2 tablespoons finely diced green pepper1 package frozen whole kernel corn (10 oz.)1 cup peeled, diced, 1/2" raw potatoes 2 tablespoons chopped fresh parsley1 cup water 1/4 teaspoon salt black pepper to taste1/4 teaspoon paprika2 tablespoons flour2 cups low-fat (1%) or skim milk 1/4 cup fresh parsley, minced
Directions
1. Heat oil in medium saucepan.

2. Add celery, onion, and green pepper and saute for 2 minutes.

3. Add corn, potatoes, water, salt, pepper, and paprika. Bring to a boil; reduce heat to medium; and cook, covered, about 10 minutes or until potatoes are tender.

4. Place 1/2 cup milk in a jar with tight fitting lid. Add flour and shake vigorously.

5. Add gradually to cooked vegetables and add remaining milk.

6. Cook, stirring constantly, until mixture comes to a boil and thickens. Serve garnished with chopped fresh parsley.

    If you want a creamier soup without adding calories, put a portion in the blender. I always do that when making corn or potato soup to get a rich texture without cream. - 9/29/09

    My family and I really enjoyed this recipe. I substituted low fat chicken broth for the water and added a very small amount of lean back bacon to make it a bit more hardy. We all really enjoyed it!! - 8/11/09

    Try adding a little corn meal to thicken. Mix corn meal with a little water before adding to chowder. - 10/15/08

    I LOVED THIS! I fixed the blandness by using 1/2 - 3/4 tsp. of salt. That's all it needed. Phenomenal!

    I fried up some chopped bacon then added vegies and sauted them before adding liquid, few chilli flakes and cumin. I also use frozen corn and cream of corn instead of flour to thicken soup. - 4/18/09

    Yummy! I added way more vegis than the recipe called for (I heart onions and celery) and it turned out delicious. It didn't thicken up for me, even after I boiled the bageesus out of it, but its tastey :) - 2/25/09

    I used chicken stock instead of water, added carrots, and used skim milk. I think you could get away with using dried parsley as well. It was a hit with my vegetarian son! - 10/18/07

    I read the reviews and did some of the additions, evap.skim milk, chichen broth, a little chipolti powde and lump crab. It was great and filling. I look forward to the leftovers for lunch tommorrow.

    YUMMY!!! My kids really liked this, I used the fat free half and half instead of milk. And I did not add the green pepper. Mine thickened up just fine. I did add extra salt and pepper and dried parsley for added flavor. Will definitely make this again!!! Thank you for a great low fat soup! - 10/23/07

    This is a wonderful recipe and very easy. I modified it by increasing the ingredients so it can feed my family. I also added garlic and green onions and shrimp to make it a Shrimp and Corn Chowder. I also used low sodium/low fat chicken broth instead of water. Delicious!!! - 10/15/07

    Absolutely fantastic! It took very little time to make, with simple, wholesome ingredients. My family loved it (requested we serve it in a bread boule next time).     I made this following the recipe exactly. Very very good! It was a little thin, so I thickened it with a little cornstarch and water and let it boil longer as I stirred.
