Corn Black Bean Salad with Cotija

Ingredients
Corn kernels from 2 medium ears of corn (can be cooked or raw)12 oz canned low-sodium black beans, rinsed and drained1/4 cup red onion, thinly sliced into half moons1/2 cup cherry or grape tomatoes, quartered1/4 to 1/2 cup scallions, sliced diagonally1 small serrano pepper, minced1 oz cotija or feta cheese, crumbled1/4 cup chopped fresh cilantro2 tbsps olive oilJuice of 1 lime1/4 tsp cumindash salt and pepper
Directions
Combine all ingredients in a large, non-reactive bowl. Chill for about 20 minutes or so to give flavors time to blend. Makes 6 servings.
