Cauliflower Toastie

Ingredients
1 cup steamed cauliflower1-2 tbsp mayonnaise1/4 tsp Dijon mustard (optional)1/4 tsp salt or Spike1 tsp chopped celery or water chestnuts (optional)2 slices whole grain bread1 tbsp butter1/2 cup alfalfa sprouts or lettuce1 tbsp carrots, shredded
Directions
Heat pan or electric grilled sandwich maker. Mash cauliflower with mayonnaise, mustard and salt. Add celery, mix. Butter bread. Place 1 slice buttered side down on pan or sandwich press. Spread cauliflower mixture on unbuttered side of bread. Sprinkle with sprouts or lettuce and carrots. Place other piece of buttered bread clean side down and grill or press for about 3 minutes until golden and toasted, filling warm. Serves 1.
