Healthy Tuna Melt

1 small can of chunk light tuna in water (3 oz)1/2 T. light mayonnaise1 T. sweet pickle relish2 slices tomato1 oz. reduced fat swiss cheese1 whole wheat english muffin
1. Preheat broiler. Toast english muffin either under broiler or in a toaster.
2. Drain tuna. Combine with mayo and relish.
3. Spread tuna salad onto english muffin, half of the salad on each half of the muffin.
4. Top each half with a tomato slice and half of the cheese.
5. Broil on top rack of your oven for 2-3 minutes or until cheese is melted.
Makes 1 open faced sandwich, or 2 half sandwiches. Goes great with a green salad!

I made this tuna melt today for lunch. I was looking for a recipe that used no or very little mayo and this one caught my eye. I did add seasoned salt, garlic powder and freshly ground black pepper. i ate it open faced and followed the recipe otherwise. I would definitely make it again! - 6/8/09
