Chicken Verde

Ingredients
2 chicken breasts cut into bite size pieces4 cups of chunked mushrooms1 bunch of cilantro, chopped coarsely1-2 cups of sour cream1 cup of Salsa Verde (Any brand will work)(optional) Onion - chopped(optional) jalapenos
Directions
Throw all ingredients into a pan over medium heat on the stove-top. Let simmer until chicken is tender. 20+ minutes. The longer it cooks, the less watery it gets.

Optional: Instead of using Salsa Verde, you can use fresh tomatillos, cooked and pureed.

Be aware that anything that you can do to make this dish less watery is a good idea. I'm planning to try straining my sour cream next time to see if that helps make a less runny burrito.

Also, I made this recipe up based on a dish at my local Mexican restaurant and it is not nearly as good. I'm pretty sure I'm missing something that adds a little tang or bite...but not spiciness...to the dish. Please let me know if you know what that might be!

    Your sour cream may be braking down do to heat. You could try adding it at the end. Mushrooms releas a lot of water you could try to cook them befor the chicken.
