Gluten-free, Sugar-free Rhubarb Cheddar Muffins

Ingredients

1/2 cup golden raisins1 large apple, a mid-sweet variety, like fuji or pink lady1/4 cup each of coconut oil and butter1 cup diced rhubard2 eggs1/2 cup each of millet, sorghum, and tapioca flour (or your favorite gluten-free flour blend, don't forget to adjust soda/gum as needed)3/4 cup gluten-free oats1/2 pecan halves, then crunch them into small pieces1 tsp each of baking soda, baking powder, xanthan gum1 cup grated cheddar cheese
Cook raisins and apple in boiling water for a few minutes until soft, then drain
Puree raisins and apples
Mix together fruit puree, eggs, coconut oil, butter, and rhubarb
Mix together separately flours, oats, pecans, soda, powder, and gum
Add wet ingredients to dry and mix well. Fold cheddar cheese into the mix.
Add milk and mix just until fully moistened
Bake at 350F for 25-30 min until toothpick comes out clean.
This made 15 large muffins with ~1/3 cup batter each, but I think it would also make nice mini muffins.
