fiber one oatmeal cookie

Ingredients
1/2 cup fiber one cereal (grinded in food processor to breadcrumb-like consistency)1/2 cup old-fashioned oats1/4 cup soy flour (or just use whole wheat flour)2Tbsp whole-wheat flour2 Tbsp brown sugar (not packed)1/8 cup granulated sugar1/2 tsp baking powder1/2 tsp cinnamon1/8 tsp salt2 tsp sugar-free vanilla powdered creamer (dissolve in 2Tbsp hot water)1 lg egg1/2 cup applesauce2 Tbsp fat free vanilla yogurt2 Tbsp raisins or craisens, chopped.
Directions
heat oven to 375 degrees

in large bowl combine fiber one, oats, soy flour, whole wheat flour, salt, baking powder and cinnamon. Add brown sugar and granulated sugar. stir.

in separate bowl mix applesauce, egg, powdered creamer dissolved in water and yogurt.

add this mixture to dry ingredients, stir until completely blended and add craisens.

spray cookie sheet and place dollops of batter. makes 15 cookies.
cook for 15-20mins. enjoy!
