Portabella Pasta

*Vermicelli, 4 oz (remove)Portabella Mushroom at least 75 gramsOnions, raw, 1 medium1/4 c. Peppers, sweet, red, raw, sliced2.5 tbsp Olive Oil, Splash Balsamic VinagaretteBasil, 2 tbsp 1/2 c. cherry tomatoes 3 cloves Garlic
Make Pasta per package instructions omitting salt.
In a skilletChop Garlic cloves and Onions, Cook in 2 tablespoons of Olive Oil over Medium heat until onions transluscent - 2-3 minutes Slice Portabellas into large chunks and add to Skillet with a splash of Balsamic Vinagarette.
cook for 2-3 minutes add thinly sliced red bell pepper and Tomatoes sliced in halves. Turn heat to low add Basil, and pepper.
Drain pasta and mix in remaining half of a tablespoon of olive Oil. Split Pasta into two Pasta Bowls.
Divide Mixture in Skillet in half and spread over Pasta. Sprinkle with Shredded Parmesan Cheese and serve.
