Country Captain Chicken Slow Cooker Recipe

Ingredients
* Chicken Breast, no skin, 8 ounces / I used frozen * Onions, raw, 1 cup, chopped (remove) * Green Peppers (bell peppers), 1 cup, chopped (remove) * Tomato Paste, 0.125 cup /about 2 tablespoons * *Hunts Petite Diced Tomato, 2 cup (remove) = 1 can * Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb (remove) / cored. I don't peel. Diced. * Curry powder, 1 tbsp (remove) * Garlic, 3 clove (remove) [I leave whole, but can be minced] * Ginger, ground, 1 tsp (remove) * Raisins, 0.25 cup, packed (remove)
Directions
Use a 6-quart slow cooker. Put the chicken into the bottom of your stoneware. Add chopped apple, onion, and bell pepper. Add garlic and all spices. Toss in the raisins and the entire can of diced tomatoes. [Optional: Do this if planning to add rice to the cooker. Stir in the chicken broth.] Cover and cook on low for 6 hours, or until chicken is tender, but still intact. Using tongs, remove chicken carefully from the slow cooker and place in a covered dish to keep warm.

Stir in raw white rice. Cover and cook again for about 30 minutes, or until rice is bite-tender. Stir in frozen shrimp, and recover cook for about 15 minutes, or until shrimp is heated through.] Rice and shrimp are not calculated in the nutrition.
I did not use.

Serve rice and shrimp mixture on a plate with chicken pieces arranged on top.

    What a awesome recipe...I added 1/2 Cup of F.F. Chicken Broth and used Brown Rice, other than that I followed it as written. . I didn't add the Shrimp, as I didn't have any. Was plenty for both DH and I without the shrimp. The rice was fantastic.....Should be great tomorrow for left overs. - 8/3/10

    I'll have to admit that I would have never thought to put these particular ingredients together, but I'm glad that somebody did. We had dinner 2 hours earlier than normal because it smelled so good and we couldn't wait to taste it. My 3 yr old and my 8 month old devoured it! Added salt and pepper - 8/11/10
