Shrimp, Spinach and Tomato Pasta

Ingredients
2 Oz. Pasta (angel hair recommended)2 Tbs Butter or Margarine3 Cloves Garlic, Minced12 Large Shrimp, raw, peeled and tails removed1 Cup Dry White Wine4 Cups Baby Spinach, rinse and drained4 Plum or Roma Tomatoes Sliced1 oz Mozzarella Cheese, shreddedSalt and Pepper to taste
Directions
Cook pasta according to directions.

Meanwhile, in a large saute pan, heat butter over medium high heat

Add garlic and saute for 2 minutes

Add shrimp and saute for 1 minute (until skin is pink, but not cooked through)

Add white wine and bring to light boil

Add spinach and tomatoes and then cover until spinach has wilted, 2-3 minutes

Drain pasta and portion out. Top with Shrimp, spinach tomato mixture, top with 1/2 the cheese each and salt and pepper to taste.
