Ingredients
* Talapia or Cod (fish), 8 4oz. fillets * Parmesan Cheese, grated, .25 cup * Bread crumbs, dry, grated, seasoned, .5 cup * Olive Oil, .25 cup * Egg, fresh, 2 large * Water, tap, 1 fl oz
Directions
Preheat oven to 425.

In small bowl, beat eggs with water. In separate bowl, mix Parmesan, bread crumbs and olive oil. Dip fish in egg mixture and then in cheese mixture to coat. Place filets on baking sheet. Bake 20 minutes or until fish flakes easily.

    Normally I don't like fish, but this was so tasty. I didn't have any breadcrumbs, so used crushed crackers instead. SIL suggested that we make it part of our normal dinner routine. I tried it with the oil this time, but will try without the oil next time. - 1/22/10

    I tried it twice - once with olive oil and once without. Both times it was very delicious, but I prefer it without the oil since the fish ends up being much less greasy. Great recipe! - 11/12/09
