Lemon Basil Chicken

Chicken breasts or tendersEggItalian Style Bread CrumbsGrated Romano CheeseGarlic ClovesVegetable Oil
You can also use chicken tenderloins, they are just the right size. Remove fat and gristle and pound between plastic wrap to uniform thinness.
Beat an egg or two with a little water. Dip chicken into egg and then into this mixture:
2/3 cup Italian style bread crumbs
1/3 cup grated Romano cheese (look for this in plastic tubs in the market, rather than the green cans.
Let chicke rest for about 1/2 hour or more so crumbs will adhere.
Saute garlic cloves in vegetable oil and a little butter.
Remove the garlic from the oil.
Saute chicken about 2 min. on each side until light golden brown at medium heat.
Place in baking pan in single layer and drizzle with lemon juice and finely chopped basil. Cover with foil, Bake at 350 about 20-25 min.
May be prepared ahead and baked later
