White Bean Hummus Pita Sandwiches

Ingredients
1 garlic clove, chopped1 (15 oz) can of Cannellini or Great Northern Beans, drained and rinsed1 tbls Fresh Lemon Juice3 Tbls Olive Oil ( Next time I think I'll cut down to 2Tbls)1/4 tsp SaltDash of cayenne pepper1/4 cup fresh parsley1 and 1/2 cup loosely packed spinach leaves1/2 med zucchini very thinly sliced1/2 cucumber, thinly sliced4 (6 inch) whole wheat pita breads halved
Directions
1. Chop Garlic in food processor. add all the remaining ingredients except the parsley; process 1 to 2 minutes or intil smooth. Add parsley; pulse to chop.

2. To assemble sandwiches, place spinach leaves,zucchini, onion, and cucumber in each pita bread half. Spoon about 2 tbls hummus into each.

Makes 4 servings.
