1lb Ground Bison1 can Organic Kidney Beans (drained and rinsed)1 can Tomato Sauce1 can Tomato Paste1 small onion (chopped)half of a green pepper (chopped)Large garlic clove (minced)5-6 Fresh tomatoes (or you can used canned)1 fresh Pablano, Serrano or Jalapeno Pepper (if desired)Mild Chili Powder (to taste)Ancho Chili Powder (to taste)Ground Black Pepper (to taste)Ground Cumin (to taste)

In a medium pot, boil tomatoes until the skins split (skip if using canned tomatoes) - approximately 5 minutes.
Once the skins split, remove boiling tomatoes with slotted spoon and wait a few minutes for them to cool. Once cool enough to handle, remove the skins (they should slip right off).
While tomatoes are boiling, spray a large fry pan (with sides) with Pam.
Add chopped onions, garlic and peppers along with ground bison to the pan.
Saute on medium for about 5-10 minutes or until bison is completely browned.
Add rest of the ingredients (including tomatoes) to the pan and reduce heat to low-medium.
Cover and simmer for about 45 minutes, stirring occassionally. Add the spices to your individual taste. Enjoy!
