Ingredients
2 tablespoons brown sugar1 teaspoon chili powder½ teaspoon grated orange rind½ teaspoon ground cumin½ teaspoon paprika¼ teaspoon salt¼ teaspoon ground coriander1/8 teaspoon black pepper4 6-ounce salmon filletsCooking spray
Directions
Preheat broiler.

Combine first 8 ingredients in a small bowl. Rub spice mixture over both sides of salmon fillets. Place salmon on a broiler pan coated with cooking spray. Broil for 8 minutes or until salmon flakes easily when tested with a fork.

    This is a really great simple recipe. I added a bit more orange zest than the recipe calls for, then I smashed up the orange and used it in a sauce with some broccoli, carrots and onion to go with the fish. - 9/19/10
