Whole Wheat Angel Food Cake

1 C. whole wheat flour (pastry wheat is great, but reg. will work fine)3 T. cornstarch3/4 C. sugar2 C. egg whites (about 2 doz. large)1/2 tsp. salt (I have left out and it doesn't seem to matter)11/2 tsp. cream of tarter1 C sugar1/2 tsp. vanilla extract1/2 tsp. almond extract
Preheat oven to 375 degrees.
sift together three times, the first three ingredients; set aside.
In a large glass bowl, beat the egg whites and salt until foamy. Add the cream of tarter. Beat until stiff, but not dry. Gradually beat in the 1 C. sugar. Add the vanilla and almond. Sprinkle sifted dry ingredients quickly and evenly into egg white mixture. Fold in. Put in a tube pan and bake. This will take about 50 min to an hour. The cake will look a bit dry on top and will pull away from the pan at the top. Don't overcook. When done, invert on a ketchup jar until cool.
One could also put in a loaf pan. The key to good angel food cake is to make sure all the utensils and the bowl are grease free. This will make 12 servings. It would also help on the calories if a sugar substitute was used, such as Splenda, for half the sugar.

I am anxious to bake this cake but how long am I supposed to bake this? - 3/17/10

Oops! It usually takes about an hour. When the top looks a bit dry and cracked it is done. Be sure and turn it over a ketchup bottle or some other small necked jar to cool before removing from pan.
