Slow Cooker Chicken with Black Beans and Sweet Potato

8 boneless, skinless chicken thighs2 tsp ground cumindash of salt and pepper1 tsp ground paprika1/2 tsp ground allspice1 cup chicken broth1/2 cup salsa3 garlic cloves, chopped1 can (15-19 oz) black beans (rinsed and drained)4 medium sweet potatoes (peeled and cut into 2 inch chunks)
Mix all the ingredients with the exception of chicken, beans and sweet potatoes in a bowl. In the slow cooker, combine the beans and sweet potatoes. Place the chicken on top of the mixture, then pour broth mixture over the chicken. Cook on low for 8 hours or on high for 4 hours.

Rather disappointed with this. I thought the sweet potatoes would add a sweetness, but instead they were just mushy. I even doubled the beans and the spices to give it more flavor, but no help. We are eating the left overs tonight. I am hoping it will taste better than it looks. - 1/17/13

My family loved this! I used chicken breasts and used two cans of 15 oz. black beans and extra salsa (organic low sodium). I cooked it for about 4 hours on low and then 45 minutes on high. The chicken shredded easily. Stir well after cooking to make a perfect stew. Garnish w/ fresh cilantro! - 1/13/13
