Blueberry Zucchini Bread

3 Eggs, Slightly beaten1 Cup unsweetened applesauce3 tsp vanilla extract1 cup white sugar1 cup packed brown sugar3 cups shredded zucchini3 cups whole wheat flour1 tsp salt1 tsp baking powder1/4 tsp baking soda1 tbsp cinnamon1 pint fresh blueberries
Preheat oven to 350 degrees. Lightly grease two bread pans.
In a large bowl, beat together the eggs, applesauce, vanilla and sugars. Fold in the zucchini. In another bowl combine flour, salt, baking powder, baking soda, and cinnamon till mixed well. Add to the wet mixture and mix well, then gently fold in the blueberries. Transfer to your bread pans and bake for approximately 60 minutes depending on your oven.
